Paneer Tikka

I saw this recipe in Ramya's blog, thought of giving it a try....Believe me,it came out really well......Since paneer is baked with veggies,it is good for health....Kids will love it.


Panneer Tikka ready to serve......

Ingredients:
1.Paneer                  -     1 pack
2.Red Capsicum      -    1/2
3.Green Capsicum   -    1/2
4.Yellow Capsicum -    1/2
5.Onion                    -    1
6.Tandoori Pwdr     -    1 tbsp
7.Chilli pwdr           -    1/2 tbsp
8.Lemon                   -    1/2
8. (a)Yogurt             -    2 tbsp
9.Salt                       -    to taste
10.Orange color       -   a pinch (optional)


Cut veggies and cubed paneer
 Method:
* Cut the veggies and paneer into cubes.
* Take a mixing bowl and add all the ingredients except  paneer  into a paste.
* Make sure the mix is not watery.add the paneer into the mixture.
* Marinate paneer in a ziploc cover and refrigerate it over night.
* Bcoz,it will be easy for the masala to get into the paneer.
* Soak the skewers in water for half an hour.
* Arrange the paneer with colored capsicums and onions in its border ,in the skewers as shown,


Tikka ready to be baked....
 * Brush the paneer with some oil.
* Take a baking pan and cover it with aluminium foil and arrange the paneer skewers in a line.
* Pre heat the oven at 400 degrees for 10 mins and keep the baking tray inside.
* In broil mode cook the paneer for 7 mins
* Take the tray out ,coat it with oil and place it again in the oven for 7mins
* Now paneer tikka is ready.

* Serve hot for the guests with some lemon squeezed again.
Note:
Make sure that paneer is not cooked more that 10 mins at a stretch in the oven,as it may burn easily.

Cauliflower Lilva curry

 Got bored of doing the same old cauliflower curry. Thought of giving a companion to the beautiful flower.Checked my freezer, and saw Valar Lilva waitng there for me to join cauliflower.Got a wonderful dish for my lunch with cabbage chana dal curry.

Ingredients:
1.Cauliflower      -   1/2
2.Valar Lilva       -   1 cup
3.Onion                -    1
4.Tomato              -   1
5.G&G paste        -   1 tbsp
6.Chili pwdr         -   1 tbsp
7.Turmeric pwdr   -   1 tsp
8.curry leaves       
9.cilantro

Method:
* Wash the cauliflower florets and add water ,salt and boil for 2 mins in microwave.
*  Drain the water and keep it aside.
* In a pan, add oil and splutter with fennel seeds and curry leaves.
* Saute the onion,tomatoes until they form a paste.
* Add the G&G paste and saute it.
* Now add the cauliflower ,Lilva and giv it a toss.
* Sprinkle some turmeric pwdr and chilli pwdr and mix it well.
* Cover it and cook for 7 mins or untill the cauliflwr is cooked well.




* Adjust salt to taste.Garnish with cilantro and serve with rice.

Cabbage Chana dal curry

Cabbage can be added with the chana dal and made into a awsome curry.This curry or kootu can be had with rice or roti.My mom used to do for rotis..I love those ...




Ingredients:
1.Cabbage             -     1/2
2.Chana dal           -     1 cup
3.Onion                 -      1
4.Tomato               -      1
5.Green chillies     -      4
6.Red chillies         -     3
7.Garlic                  -     3 to 4 pods
8.Chilli pwdr          -    1/2 tbsp
9.Cumin seeds        -    1 tsp
10.Mustard seeds   -    1 tsp
11.Curry leaves    
12.Cilantro    

Method:
* Chop the cabbage,onion,tomatoes and green chillies.
* Pressure cook the chana dal.
* Crush the garlic.
* In a pan,add oil and splutter with mustard seeds,cumin seeds ,red chillies and curry leaves.
* Saute the onion and green chillies, till they are transparent.
* Now add the garlic to the pan.
* Add the tomatoes and sprinkle some salt for fast cooking.
* Now dump in the chopped cabbage and saute it well.
* Add the chilli pwdr and mix it well with the cabbage.
* When the chili pwdr is fully cooked ,dump in the chana dal.
* Mix it well with the cabbage mixture and adjust salt to taste.
* Garnish with cilantro.



* Serve it with hot rice or roti.

Idiyappam - String Hopper - இடியாப்பம் - step by step

 Idiyappam or rice noodles is an authentic south Indian dish.Its very famous in kerala and Tamilnadu.It is a very healthy and tasty dish.I got the rice flour and the press for idiyappam, when I went to India from my MIL.I got time today to try that dish for first time.Believe me,I got it very well.My Critic (Ramesh) ,himself said its so soft and tasty.Chk the recipe.





Ingredients:
1.Rice flour          -     2 cups
2.Hot Water                -      1 cup
3.Oil                     -      1/4 cup
4.Salt                    -      to taste.

Method:
* We can either buy rice flour from shop or do it at home.

Home method:

*  Soak the rice in water for half an hour and dry in under a fan.
* Throw it in a blender and make it a pwdr.
* We can also dry roast the rice flour in a pan and sieve it.
* this is the Grannys method and u will get nice soft idiyappams.
 Actually I got the home made rice flour from my MIL and it came out really well.

Now lets get into the process.
* Boil the water in stove and keep it ready.we can keep some extra hot water for final touch ups.
* Take a wide mouthed bowl and mix the rice flour and salt together,
* Now add the hot water slowly and mix the flour with a wooden stick.
* Add the oil into the mixture.
* When the flour mixture is warm, make it into a soft dough with hands as shown.



Soft Dough

* Grease the press with oil and fill it with the dough. Make rice noodles in a greased idli plate.



Ready to be cooked.....
* For every batch ,coat the dough with oil or hot water and press it.Bcoz when time passes, the dough may become hard to press.
* Cook it well and serve with coconut dressing and sugar.
We can also serve idiyappams with vegetable stew,coocnut milk ,chicken curry or goat leg curry (Paya).



Potato Roast (Urulai fry)

Potato roast is all time favourite.It goes very well with curd rice and all rice varieties.This recipe is my mother's and we all will fight to have a large portion of this dish.


 Drooling Aloo!!!
 Ingredients:
1.Potatoes               -   4
2.Garlic                  -   4 to 5 pods
3.Chilli pwdr          -  1 tbsp
3 (a) Turmeric pwr -  1 tsp
4.Hing                     -  a pinch
5.Mustard seeds      -  1 tsp
6.Curry leaves         -  1 spring
7.Cilantro
8.Urad dal               -  1 tsp

Method:
* Boil the potaoes with a pinch of turmeric pwdr and 1 tsp salt ,for 2 whistle or till it is half boiled.
* Crush the garlic with a crusher.
* In a pan, add oil and splutter with mustard seeds and urad dal.
* Add hing and garlic to the tempering.
* Add chilli pwdr and turmeric pwdr in oil and let the raw smell disappear.
* Dump in the potatoes into the pan.
* Put it in low flame and let it roast well.

Rasam Powder

My rasam pwdr got over and I thought of buying it.Though there are so many different varieties available in the market, the home made version is the best.Immediately , with the grace of vonage, called mom and she gave me this recipe.It has more flavor and taste. Just add a little rasam pwdr to the rasam before bringing it to boil, ur rasam will feel like heaven.The measurements are for small quantity only, bcoz I prefer to ground it whenever necessary.Bcoz large quantity rasam pwdr may loose its flavor when days pass by.But if u want to ground it in large quantity, just double the measurements.


Freshly grounded pwdr!!!
 Ingredients:
1.Pepper corns        -   1/2 cup
2.Cumin seeds         -   1/2 cup
3.Toor dal               -    1/4 cup
4.Coriander seeds   -     1/4 cup
5.Red chillies          -     5 to 7


Ingredients for rasam pwdr.
 Method:
* Dry roast all the ingredients and cool it  for some time.
* Throw the roasted mixture into the blender and grind it as shown.
* Store it in a airtight container and use it when u r preparing rasam.

Secrets of soft idlis

Idlis and dosas are the staple food of south indian cuisine.Its the batter which matters a lot. The batter is a mixture of rice,urad dal,methi seeds and a secret ingredient.
                                                Guess wat? Yes it is Soya.
When we went for vacation this year to India , my MIL introduced , this secret ingredient to me.Soya makes idlis very soft. And it can also be used with wheat flour ,which makes chapathis softer. Soya is fat free also ,so why can't we give it a try.Believe me it works really good.

Ingredients:
1.Rice          -   4 cups
2.Urad dal   -    1 cup
3.Soy beans -    1 tbsp
4.Methi seeds-   1/4 tsp

 Method:
* Soak all the ingredients for 4 hrs and grind it in a grinder or mixie.
* Ferment the batter after adding salt for overnight or till it gets ferment.
* Cook idlis in idli cooker .
* Wow soft ,hot idlis are ready , just serve with hot chutney.

Note:
We can also add half cup of  poha or aval instead of soya,this also gives extraordinary effect to idlies.
