Idli Milagai podi

Idli milagai podi is a spicy dal powder ,goes well with idlies,dosais.This is a very traditional side dish for south Indian tiffins.Every hotel has this spicy powder as a default side dish for idlies and dosais.When mixed with sesame oil,it becomes a delicacy.This particular recipe is from my mom.she is a queen in making podis.Adding peanuts and sesame seeds ,makes it  flavourfull.

Ingredient: 
1.Urad dal              -        1 cup
2.Chana dal            -        1 cup
3.Red chillies         -        15 to 20
4,Pepper corns       -        1 tsp
5.Sesame seeds      -        1 tbsp
6.Peanuts                -        1/4 cup
7.Curry leaves        -        a hand ful
8.Hing                     -        a pinch

Method:
* Take a pan,add  little oil.
* Slowly roast all the ingredients to golden brown.
* Cool the ingredients completely.
* Grind the ingredients to a coarse powder.
* Add hing and salt.Mix it well.
* Store it in a air tight container.

Peanut and Sesame Podi - Very apt for Idlies and dosais

 Peanuts are everyone's favourite.When it is added as a ingredient,for idli podi,then it tastes too gud.One of my friend used to bring it along with idlies ,during my school days.We used to finish her box immediately.But I dont know the exact proportion of this podi.When I saw the recipe in "En Veetu Kitchen" ,by Priya Vaasu,then I thought ,I wud surely try this recipe.To my surprise, my hubby loved it.We enjoyed with idlies.
 Thank u Priya ,for ur recipe..Just add gingely oil and serve with idlies or dosais.


Ingredients;
1.Peanuts                    -             1 cup
2.Sesame seeds          -              1/4 cup
3.Chana dal                -              2 tbsp
4.Red chillies             -              6 to 7
5.Curry leaves            -              few
6.Hing                         -             a pinch
7.Salt                           -              as required

Method;
* Take a pan., dry roast the ingredients except hing .
* Let it cool for some time .
* Grind it to a coarse pwdr after adding hing.
* Enjoy adding  gingely oil,with hot idlies or dosai.


* Hot rice is also apt for this pwdr.
* Mix it with gingely oil along with this pwdr for rice.

Note:
To make it more flavourful, we can also, add a tsp of pepper and cumin seeds along with other ingredients.

Rasam Powder

My rasam pwdr got over and I thought of buying it.Though there are so many different varieties available in the market, the home made version is the best.Immediately , with the grace of vonage, called mom and she gave me this recipe.It has more flavor and taste. Just add a little rasam pwdr to the rasam before bringing it to boil, ur rasam will feel like heaven.The measurements are for small quantity only, bcoz I prefer to ground it whenever necessary.Bcoz large quantity rasam pwdr may loose its flavor when days pass by.But if u want to ground it in large quantity, just double the measurements.

 Ingredients:
1.Pepper corns        -   1/2 cup
2.Cumin seeds         -   1/2 cup
3.Toor dal               -    1/4 cup
4.Coriander seeds   -     1/4 cup
5.Red chillies          -     5 to 7


Ingredients for rasam pwdr.
 Method:
* Dry roast all the ingredients and cool it  for some time.
* Throw the roasted mixture into the blender and grind it as shown.
* Store it in a airtight container and use it when u r preparing rasam.

Multi purpose masala pwdr

This multi purpose pwder can be used in many dishes,with some variations. Keep this pwder handy and it will help u in all emergancies.It has a longer shelf life.Just saute vegetales and sprinkle some pwder , an instant mix rice is ready.I will post every dish in my blog in future.

Ingredients:
1.Red chillies            -   10
2.Coriander               -   2 tbsp
3.Chana dal               -   1 tbsp
4.Urad dal                 -    1 tbsp
5.Fenugreek seeds     -   1/4 tbsp
6.Cumin seeds           -    1 tbsp



Method:
* Dry roast all the ingredients and grind it in the blender.
* For bisibelabath , just add coconut to the pwder, as shown below.

* For puliyodharai, just grind it coarsely with sesame seeds as shown below.
* For other rice like,capsicum masala rice and brinjal rice , just saute them in the pan of oil and sprinkle the powder. Add to the steamed rice.
