Mutton Pulao is the cousin for mutton biriyani.It has low spice level but high in flavors.My H is a very big fan of mutton biriyani,but since he is recovering from illness,I dont want to give him full spices.This dish came handy as it has less spices.My friend ,sho introduced me this dish and it came really well.An easy recipe ,give it a try ,it wud become ur family's fav...
Ingredients:
0.Basmati Rice - 2 cups
1.Mutton - 1 pound
2.Onion - 2
3.Green chillies - 5
4.G&G paste - 1 tbsp
4(a).Coriander pwdr 2 tsp
5.Mint leaves - 1 cup
6.Cilantro - 1 cup
7.Coconut milk - 1 cup
For Seasoning :
1.Cinnamons sticks - 1
2.Cloves - 5
3.Bay leaves - 2
4.Fennel seeds - 1 tsp
5.Ghee - 2 tbsp
Method:
* Pressure cook the mutton for 2 whistles,with half tbsp of G&G paste and salt.
* Take it out and separate the mutton from the stock.
* Wash and soak the basmati rice for 15 mins.
* Fry it in the ghee for 3 mins and keep it aside.
* Take a pressure pan ,add ghee,splutter with all the seasoning ingredients ,except ghee.
* Now add chopped onion,slit green chillies and sprinkle some salt.
* When it oozes out oil,add the G&G paste and mix well.
* Now ,add the coriander pwdr,mint leaves,coriander leaves and mix well.When it,looses its raw smell,add the cooked mutton.
* Scald it well.Now add the coconut milk and 3 cups of mutton stock (totally 4 cups) ,and bring it to boil.We can also avoid coconut milk and add the mutton stock alone,but the total is to be always 4 cups for 2 cups of rice.
* Now add the fried basmati rice and pressure cook for 1 whistle and turn it to low for 15 mins.
* Turn it off and transfer it to another bowl and garnish with cilantro.
* Serve it with raitha.

Vegetable Pulao
Vegetable pulao is a one pot dish and has all the veges mixed together with fresh spices.Its a kind of biriyani,with less spice.Kids will surely enjoy this dish, with the colorful veges.Since I was planning for Thanks Giving Shopping, I cudn't spend much time in cooking.I did this dish with no time....
Ingredients:
1.Basmati rice - 1 1/2 cups
2.Potato - 1
3.Carrot - 1
4.Peas - 1 cup
5.Onion - 1
6.Green Chillies - 6
7.G&G Paste - 1 tsp
8.Mint Leaves - 1 cup
9.Cilantro - 1 handful
10.Whole Graram masala- ( 1 inch Cinnaman,4 cardamom,1 tsp of fennel seeds,4 cloves)
Method:
* Wash and soak basmati rice for 15 mins
* Chop veges finely.
* chop onion lenth wise,slit green chillies.
* Take a pan add 1 tbsp of oil and 1 tbsp of ghee.
* Splutter with whole garam masalas .
* Saute onion, green chillies ,till it oozes out oil.
* Now mix a tsp of G&G paste and mix well.
* When it looses it raw smell, dump in all the veges.
* Sprinkle some salt - for the veges to cook fast.
* When the veges are 3/4 th cooked, add 3 cups of water and bring it to boil.
* Sprinkle soaked basmati rice to the mixture and add mint leaves and cilantro.
* Cook for 1 whistle and keep in dhum for 15 mins.
* Once the whistle is released, transfer it to another container, this will prevent the rice from sticking together.
Garnish with cilantro and serve hot with any raitha..

Pudina Pulao (Mint Rice)
Pudina - even the name has its mesmerizing aroma. U put it in any dish, it changes the dish totally and takes full control.Its my favourite . Blame it on my mom, who introduced me to this wonderful greens.
She used to make chutneys for chapathis and idlis.Wow the number of chapathis and idlis goes in becomes countless...With a open heart and empty stomach ,I proudly present u, this mint rice ...
Ingredients:
1. Basmati rice - 2 cups
2.Mint leaves - 1 cup
3.Onion - 1
4.Green chillies - 6
5.whole garam masalas
6.Cashews ( for garnishing)
7. Cilantro
Method:
* Its a one pot dish.
* Chop the onion lenghthwise and slit the green chillies.
* Wash and grind the mint leaves with 4 green chillies.
* Make into a fine paste as shown.
* Wash the basmati rice and soak it in water for 15 mins.
* Take a pressure cooker pour 1 tsp of ghee and fry the basmati rice for few minutes and keep it aside.
* In the same cooker add oil and splutter with shown whole garam masalas.
* Saute onion and remaining 2 green chillies till they ooze out oil.
* Pour the grinded mint & chilli mixture into the cooker and saute it with onions.
* When mint looses its raw smell, add 4 cups of water and bring it to a boil.
* Slowly add the fried basmati rice into the cooker and mix it well.sprinkle salt to taste.
* Let cooker whitles once and keep in dhum for 15 mins in low flame.
* Transfer the rice immediately to another container, this will make the rice non-sticky.
* Garnish with cilantro and fried cashews.

Peas Pulao
Pulaos can be done in 100 different ways.Here i have shown u ,peas pulao.This dish goes well with prawn gravy,mutton gravy,and ofcourse chicken.
Ingredients:
1.Basmati rice - 1 cup
2.Peas - 1/2 cup (boiled)
3.Onion - 1
4.green chillies - 2 to 3
5.coconut milk - 1 cup
6.ginger garlic paste - 1 tbsp
7.whole garam masala
8.salt to taste
9.cilantro for garnishing
10.ghee - 1 tbsp
Method:
* Wash and soak the basmati rice for 15 mins
* chop the onions and chilles length wise.
* grind the coconut and take milk out of it.
* soak the green peas over night and pressure cook it .make sure it is half boiled.
* In a pressure cooker, pour 1 tbsp of ghee and let it get heated.
* now add the soaked basmati rice and let it slightly get roasted.
* remove the rice from the cooker and keep it aside.
* Now add oil in the cooker and add all the whole garam masalas ( cinnamon,cardamon,cloves,brinji leaves)
* Add green chillies and onions and saute it untill light brown.
* Add ginger garlic paste and fry it until the raw smell is out.
* Now add the peas and let it get cooked .
* pour the coconut milk and a cup of water.
* once the water is boiled , add the rice and add salt to taste.
* After a whistle keep the flame to low for 15 mins
* Remove the cooker from heat and transfer the pulao to another vessel.
Now the Peas pulao is ready, just garnish with cilantro.
Note:
The reason for transferring the rice after cooking to another vessel ,is to make the rice non sticky .We can use all veg instead of peas.Carrot,beans,potato,broccoli ,everything goes very well with this.
