Paneer Paratha - day 5 of blogging marathon

 Today is the 5 th day of blogging marathon.I am going to present my recipe in the category "Regional cuisine".Parathas are from punjabi cuisine.There are so many variations in the size ,stuffing ....Here I am going to give u the recipe of paneer parathas.
 Parathas are indian flat bread which literally means 'layers of cooked flour'.It can either be circle or triangle.The stuffing can be anything like aloo,peas or paneer.It depends on one's imagination and taste .
This was in my mind for a long time.but now only had an oppurtunity.



Ingredients:


For the dough:
1.Wheat flour                     -         2 cups
2.Water                               -          1 cup
3.Salt                                    -          1/4 tsp
4.Sugar                                 -          1/2 tsp
5.Oil                                      -           2 tsp


For the filling;
1.Paneer                               -         1 cup    (grated)
2.Chilli pwdr                       -          1/2 tsp
3.Green chillies                  -          1 tsp    (minced or 3 numbers)
4.Garam masala                 -           1/2 tsp
5.Cilantro                            -           1 tbsp (minced)
6.Salt                                    -           as needed
7.Oil                                      -           1 tsp


Method:
* Mix all the ingredients under for the dough and make a soft dough.
* Cover and keep it aside.
* take a microwave safe bowl ,add all the ingredients except paneer,cilantro and cook it for 30 secs.
* Now take it out and mix the paneer with the masala in the bowl.
* Now add the minced cilantro and give it a stir.
* Divide the mixture into equal parts and roll them into soft balls.


* Make sure that the no. of dough balls are equal to no. of paneer balls.
* Dust the board with wheat flour and place the dough ball in it.
* Pat it ,so that the outer edges are thin and the inner portion is thick as shown in the pic.
* Now place a ball of  paneer in the middle and cover it with the dough.
* Roll it into a thin roti ,by pressing it on one side only.
* On a heated tava,cook the paratha on the opposite side first....this makes the paratha to blow.Flip it around and press it with the spatula.After both sides are cooked, drizzle with some oil .
* Serve it with a dallop of curd ..
A glass of lassi goes well with parathas...

Note:
As paneer will be bland ,it is adviceable to spice it up a bit more than u do for other parathas.Before ,cooking the paratha, tap off the excess flour .This helps the paratha to unchange its color.

Paneer Tikka

I saw this recipe in Ramya's blog, thought of giving it a try....Believe me,it came out really well......Since paneer is baked with veggies,it is good for health....Kids will love it.


Panneer Tikka ready to serve......

Ingredients:
1.Paneer                  -     1 pack
2.Red Capsicum      -    1/2
3.Green Capsicum   -    1/2
4.Yellow Capsicum -    1/2
5.Onion                    -    1
6.Tandoori Pwdr     -    1 tbsp
7.Chilli pwdr           -    1/2 tbsp
8.Lemon                   -    1/2
8. (a)Yogurt             -    2 tbsp
9.Salt                       -    to taste
10.Orange color       -   a pinch (optional)


Cut veggies and cubed paneer
 Method:
* Cut the veggies and paneer into cubes.
* Take a mixing bowl and add all the ingredients except  paneer  into a paste.
* Make sure the mix is not watery.add the paneer into the mixture.
* Marinate paneer in a ziploc cover and refrigerate it over night.
* Bcoz,it will be easy for the masala to get into the paneer.
* Soak the skewers in water for half an hour.
* Arrange the paneer with colored capsicums and onions in its border ,in the skewers as shown,


Tikka ready to be baked....
 * Brush the paneer with some oil.
* Take a baking pan and cover it with aluminium foil and arrange the paneer skewers in a line.
* Pre heat the oven at 400 degrees for 10 mins and keep the baking tray inside.
* In broil mode cook the paneer for 7 mins
* Take the tray out ,coat it with oil and place it again in the oven for 7mins
* Now paneer tikka is ready.

* Serve hot for the guests with some lemon squeezed again.
Note:
Make sure that paneer is not cooked more that 10 mins at a stretch in the oven,as it may burn easily.

Paneer Butter Masala (PBM)

Paneer butter masala is a famous north indian side dish. Now has found its route in south also.It is well known for its creamy texture and it melts in our mouth as its name specifies.Oh ok my ,mouth starts watering, lets get into the recipe





Ingredients:
1.Paneer - 1 cup
2.onion - 1
3.tomato - 1
3.green chillies - 2
4.Kasturi methi pwdr - 1/2 spoon
5.chilli pwdr - 1 tbsp
6.kesari color - a pinch
7.half & half milk - 1 cup
8.cilantro
9.garam masal pwdr (optional)
10. butter - 1 tbsp

Method:
* slice paneer into cubes.
* grind onion and tomato separately and keep it aside.
* In a heated pan, add oil and spltter some whole garam masalas.
* add the grinded onion and saute it until translucent. then add chillies and saute
* Now add the tomato with little salt .This salt makes the tomato to cook quickly.
* add chillie pwdr,garam masala pwdr and kasturi methi. let d masalas mix well.
* after the masalas lost it raw smell, add the cubed paneers and fry well
* add half & half milk with a pinch of kesari color.
* add a tbsp butter in to the gravy. this givs the rich texture
* turn the stove off after 4 mins and garnish with cilantro.
serve it with hot chapathis or butter naans

Notes:
Kasturi methi pwdr is available in any indian store.
It can also be prepared at home, by drying the methi leaves in a heated oven...
