Mushroom Manchuriyan - Dry version

Are you tired of eating mushroom kurma,mushroom fry ? Here is an ultimate solution for mushroom haters.This dish is a delicious dish,which can make people to love mushroom and also will make kids to have a healthy meal.My H is not a mushroom lover.But when I prepared this dish,he changed his opinion about mushroom to certain extent.So people,why waiting? Come and enjoy this exotic Indo-Chinese dish.


Ingredients:
For Deep frying:
1.Mushroom          -         250 gm
2.Besan flour          -         1 cup
3.Corn flour            -         3 tbsp
4.Ginger garlic paste -        1 tsp
5.Red chilli pwdr     -          1 tsp
6.Oil for frying       

For Munchuriyan:
1.Onion               -         1/2
2.Ginger               -         1/2 inch (chopped)
3.Garlic                 -        4 pods (chopped)
4.Green chillies     -         2 (chopped)
5.Tomato ketchup  -        1 tbsp
6.Chilli garlic sauce -        1/2 tbsp (optional)
7.Curry leaves and cilantro

Method:
* Wash and cut the mushroom and keep it aside.
* Take a mixing bowl,add besan flour,corn flour,g&g paste and red chilli powder.
* Add very little water and form a batter of bajji consistancy.
* Keep a pan of oil in the stove.
* When the oil is very hot,dip the mushroom in the batter and fry it in oil.
* Remove the fried mushrooms ,drain the excess oil using a tissue paper. and keep it aside.

Munchuriyan:
* In a separate pan,add oil and keep the flame really high.
* One by one,add curry leaves, sliced onion,garlic,ginger and green chillies.
* Let them get fried partially,that is ,it shud not be mushy.
* Now add the fried mushrooms and give it a toss.
* Add the tomato ketchup,salt and chilli garlic sauce according to ur taste .
* Turn off the stove and garnish with chopped cilantro.

Notes:
* Mushrooms will not be crisp after frying,becaue of its texture.
* We can also add some water to the munchuriyan to get a gravy consitancy,which can be used as a side dish for roti and naan.

Spring Roll-Day 7

This is the final day of our blogging marathon.Beautiful seven days, has passed just like that.Thank you Sri Valli for giving this wonderful experience.Today I am going to give u the recipe of  spring rolls in the kids special.Spring rolls can have any type of filling like,vegetables,egg or chicken.We used  to enjoy chicken spring rolls and egg spring rolls in "Panda Express" .In rohith's terms,"roll egg" is his favourite.But here I have used vegetables as the filling.Vegetables has to be shredded finely.Give it a try , u will not eat just one.My family enjoyed these rolls very much.

Ingredients:

For filling:
1.Carrot                    -              1
2.Cabbage                -               1/4
3.Beans                    -                1/2 cup
4.Soy sauce              -                1 tbsp
5.Ajinomotto            -                 1/4 tsp
6.Pepper pwdr         -                 a pinch
7.Salt                        -               as required

For the outer covering:
1.Spring roll pastry sheet       -           12
2.Egg                                      -            1
3.Oil                                       -            For frying

Method:
For filling:
* Julienne the veges and boil it in a pan for 10 mins.
* Make sure the veges are not cooked completely,it shud be crunchy.
* Now take out the veges in a muslin cloth and squeeze out the excess water.

* When the veges are hot,chop them finely.
* Now add soy sauce,ajinomotto,pepper pwdr ,salt and mix it well.
* Make sure that the mixture is dry.


Assembling:
* Keep the pastry sheet covered by damp cloth.When  needed,just take one at a time.As it will become like paper ,when it is exposed to air.
* Take the filling ,place it on one corner of the pastry sheet.
* Fold it inside.Then apply egg wash on left and right corners and fold it in again as shown in the picture.
* Now apply the egg wash on the top corner and fold it inside again as shown.
* The reason for applying egg wash is,it will stick prpoerly.

Frying:
Let the rolls rest for 10 mins.Deep fry the rolls in a medium hot oil.Wipe off the excess oil by using a tissue.Serve hot with ketchup or ranch.

Note:
We can alter the filling according to our choice.Egg rolls can be prepared by simply adding shredded boiled egg.Dont drop the rolls in hot oil,as there are chances for burning.We can alternatively use milk wash instead of egg wash.

Chicken Fried Rice

Fried rice. is the  best way to serve veges to our kids,If prepared in a healthier way.I used to prepare ,once in a month.This time, wanted to do chicken version.It was fabulous and went well with oven roasted chicken 65 .Will post the recipe soon.

Ingredients:

For Cooking Rice:
1.Basmati rice             -          2 cups
2.Water                       -           3 cups
3.Oil                           -            few drops

For frying:
1.Onion                      -            1
2.Garlic                     -             4 pods
3.Ginger                    -             1/2 inch
4.Green chillies        -              2
5.Carrot                    -              1
6.Peas                       -              1/2 cup
7.Colored capsicum -               1/2  cup
8.Spring onions        -                1 tbsp (optional)
9.Cilantro                -               hand full
10.Eggs                    -               1 (optional)

Flavouring agents;
1.Pepper pwdr          -              2 tbsp
2.Ajinomotto             -              2 tsp
3.Soy sauce               -              1 tbsp
4.Vinegar                   -              1 tsp

For cooking chicken:
1.Chicken pieces       -             1/2 cup
2.G&G paste             -              1 tsp
3.Turmeric pwdr       -              1/2 tsp
4.Garlic                     -              4 pods
5.Green chillies        -               2
6.Pepper pwdr          -               1 tbsp
7.Salt                        -                1 tsp

Method:

Rice:
* Cook the rice with all the other ingredients and cool it off  in a plate for half an hour.I used rice cooker.We can also cook the rice on stove top and strain the water.The ultimate motto is to get non sticky rice.If u have leftovers in ur fridge, then it will be very apt for fried rice.

Cooking chicken:
* Wash and pressure cook the chicken with G&G paste ,salt and turmeric pwdr,for 2 whistles.When the pressure is released,remove the bones and cut into small pieces.
* Grind garlic and green chillies together into a fine paste.Take a pan add very little oil and saute this paste and slowly add the cooked chicken pieces.Adjust pepper and salt to the chicken and keep it aside.


Frying:
* Slice all the veges,including onion ,ginger and garlic into thin slices.
* Take a wide pan,add oil , saute onion,ginger and garlic slices.
* Now slowly dump in the veges and give it a stir.
* Scrumble egg and add it to the mixture.
* Now slowly add the seasonings and toss it.
* Mix the cooked rice and adjust salt to taste.
* Now sprinkle cooked chicken and spring onions .
* Garnish with cilantro and serve with any dry or ketch up.

Vegetable noodles - An easy version...

Today ,got up late .Rushed for walking.Cool breeze and wind chill woke up my senses.I was the only one walking on the streets.Sunrise - from a bridge view,remembered my home town.Hmm, I 've become too poetic and started singing ,my fav melodies .....I enjoyed my walking.when I came back,its almost 8 am.when I thought of quick B/F, noodles striked my mind immediately.My son's favourite too....Made it ready for him within 15 mins.It came out really well..



Ingredients:
1.Noodles           -         1 pack
2.Mix veges        -          1 /2 cup
3.Onion               -          1/2
4.Tomato            -           1
5.Green chilies   -            1
6.G&G paste       -            1 tsp.
7.Cilantro

Sauces:
1.Red chilli sauce     -       1 tsp
2.Ketch up                 -       1 tsp
3.Vinegar                   -       1 tsp
4.Soy sacuce              -        2 tsp

Method:
* Take a bowl , add noodles,water and oil ,mix it and microwave for 3 to 4 mins or until,noodles is cooked 95 %.
* Drain it and wash it in cool water.
* Take a pan,add chopped onion,green chillies.Saute it well.
* Puree the tomato in a blender.
* Add it to the onion mixture.
* When it is cooked,add G&G paste and saute it well.
* Now add all the sauces,one by one and give it a stir.
* Now add the cooked noodles and toss it.Adjust salt to taste.
* Make sure noodles is not too cooked.
Garnish with cilantro and serve hot.

Gobi Manchuriyan

Gobi manchuriyan is an Indo-Chinese dish .Its a gravy version of gobi 65 , where gobis are deep fried in oil and added to the gravy.I had this in my mind for a long time back,but now only I got a chance to do it. Its very easy and can be altered according to ur taste buds.


Ingredients:
For frying:
1.Gobi                          -            half head
2.All Purpose flour      -             2 tbsp
3.Corn flour                 -              1 tbsp
4.G&G paste                -              1 tsp
5.Soy sauce                  -               1 tsp
6.Ajinomotto                -               a pinch
7.Pepper pwdr             -               1 tsp
8.Salt                           -                to taste

For Gravy:
1.Onion  ( chopped)            -               1/2
2.Garlic  (Crushed)             -                4 pods
3.ginger  ( Minced )             -                 1/2 inch
4.Green chillies  (Chopped) -                  1
5.Red &yellow bell peppers-            1/2 each ( sliced)
6.corn flour                           -                1 tsp
7.Soy sauce                           -              1 tbsp
8.Red chilli sauce                  -              1 tbsp
9.Tomato Ketchup                  -              1 tbsp
10.Vinegar                              -              1 tsp
11.Ajinomotto                        -               a pinch
12.Cilantro                             -                for garnishing

Method:
For Gravy:
* Wash and separate the florets.Pat it and dry them.
* Make the gravy first,so we can fry the gobis and put it in the gravy.this way the gobis will be crispy.
* Take a pan, add oil, saute onion.
* dont saute it too much,add ginger,garlic and let it loose its pungent smell.
*  Now add green chillies,red & Yellow bell peppers.
* Make sure that the peppers are crisp enough.
* Now slowly add all the sauces and give it a stir.
* Add ajinomotto and also u can add pepper pwdr to make it little spicy.
* Now dissolve corn flour in a cup with 2 tbsp of water and pour it into the gravy.
This helps the gravy to be thick.

Gobi fry:
* Now take a mixing bowl, add all the ingredients under 'for frying' except gobi and form it into a bajji batter by adding little water.
* Dip the gobi florets and deep fry them in oil.
* When all the gobis are fried, immediately add it to the gravy and give it a stir.
* Garnish with cilantro and serve hot with fried rice,noodles or any pulaos.

Note:
The sauces added here are according to my taste, u can alter the proportions according to ur taste.
If u dont want ur manchurian to be too thick, then u can reduce the amt of corn flour.

Egg Fried rice

When i think of fried rice, i remember those i had in chennai. It so was spicy, that we have to drink a lot of water.I am carving for those spicy fried rice here in dallas. no i cant find one. So i started doing myself.It came out really well.Its a very simple dish and delicious also.

Ingredients:
1.Basmati rice - 1 cup
2.Onion - 1 medium size
3.carrot - 1
4.capsicum - 1
5.cabbage - 1/4 (optional)
6.beans - 4 to 5
7.ginger
8.garlic - 3 to 4 pods
9.green chilles - 2
10.a pinch of ajinomoto
11.soy sauce
12.pepper pwdr
13.salt to taste
14.egg - 2

Method:
* Boil the basmati rice in a rice cooker with a spoon of oil.just add 2 cups of water to 1 cup of rice.This oil keeps the rice non sticky.Once the rice is cooked transfer it into a flat pan for cooling.Because , we need the rice to be separate for fried rice.
* cut all the vegetables length wise, even the ginger and garlic.make sure that they are thinly sliced
* heat the pan and add 2 spoon of oil into it.Add onion and salt , saute for 1 min.Then add ginger.garlic,and all the vegetables.make sure that they are 50% cooked.


Now in one part of the pan add these eggs and make it cook for 2 mins.Once eggs are cooked now mix it with the vegetables.add a dash of ajinomotto and mix it well.
* Now add the boiled rice and mix with this mixture.make sure that the stove is simmer.Add a spoon full of soy sauce and mix well.add salt to taste and garnish it with cilantro or spring onions.


Delicious fried rice is ready.Just serve it with some ketch up.It tastes yummy

Note::
Other rice can also be used.make sure it dont boil fully.
U can add any number of veges.it depends on ur taste.
