Potato stuffed Idlies

Are u a fan of idlies or are u a hater of idlies.Then this is for u.Idlies are my husband's enemy and it is the last thing in the world ,for him to have.I was always in a hunt for twisting them.While googling,got this recipe from the below site.It was easy and tasty too.The stuffing idea always inspired me a lot.Idli stuffing made me to prepare it immediately.Luckily I had idli batter.So prepared this for break fast. I enjoyed idlies without any side dish.Planning to prepare variations in the stuffing in future.

Ingredients:
1.Idli batter                       -      1 cup
2.Potato                              -       1/2
3.Peas                                 -       1 tbsp
3 (a).Onion                         -        1/2
4.Green chillies                  -       3
5.Cashews                          -       1 tsp
6.grated cheese                   -       1 tbsp
7.Turmeric pwdr                 -       1/2 tsp

For tempering:
1.Oil                                   -      1 tsp
2.Mustard seeds                 -       1/2 tsp
3.Cumin seeds                    -       1/2 tsp

Method:
* Boil the potato and mash it off.
* Take a pan,prepare the tadka.
* Saute the , chopped  onion ,cashews and green chillies.
* Add the mashed potatoes,peas and give it a stir.
* Finish it off with the cilantro and grated cheese.
* Divide them into equal balls and pat them into patties.


* Take a idli mould ,grease it with oil.
* Pour 2 tbsp of batter in all the moulds.
* Keep the patties on the batter and cover it with 2 more spoon of batter.
* Steam cook the idlies and serve hot with any chutney or podi.

Note:
The idli batter have to be bit thicker.This makes the stuffing covered properly.

Potato Stuffed Capsicum with shredded cheese topping

Stuffed capsicum or Bharwan Capsicum is a very famous north Indian dish.It is a spicy stuffing of potato into capsicum.Capsicum is my all time favourite.I wud love to add it in any dish.When potato is stuffed in,the flavor doubles.We can alter the stuffing by paneer also.This goes very well with rotis ,parottas or any bread items.This weekend,I got a chance to prepare this wonderful dish.It went out very well.To be healthy, I prepared it on a oven.We can also cok it on a tava.


Ingredients:

For outer layer:
1.Capsicum           -            2
2.Oil                      -            1 tsp

For Stuffing:
1.Potatoes             -            1/2
2.Onion                  -             1/2  
3.Green chillies     -             2
4.Garlic pods         -             4
5.Carrot                 -             1/4
6.Garam masala    -              1/2 tsp
7.Shredded cheese-              1 tbsp (optional)
8.Lemon Juice       -              1 tbsp
9.Cilantro        

Method:
Potato Stuffing:
* Boil the potato,carrot and mash it .
* Take a pan of oil,add chopped onion,green chillies and crushed garlic.
* Saute it well,till it oozes out oil.
* Now dump in the mashed potato-carrot mixture and mix it well.
* Add garam masala and toss it.
* Adjust salt to taste.Sprinkle lemon juice to the mixture.
* Garnish with cilantro.



Stuffing Process:
* Wash and cut the top layer of capsicum,remove the pit,seeds and make it hollow.
* Brush oil in and out of the capsicum.
* Take a sccop full of stuffing and fill it inside the capsicum.
* Now top with shredded cheese and spring onion.

Baking:
* Pre heat the oven for 400 degrees.
* Place the stuffed capsicum on a tray and bake it for 30 mins or untill the outer layer of capsicum is shrunk.
* In between,brush the capsicum with oil.
* Serve with hot rotis....

Aloo Gobi sabzi

Aloo gobi is a mixture of cauli flower and potato,cooked with masala.This goes very well with rotis,pulkas and pooris.I had little cauli flower and 1 cooked potato as left over.So planned to combine them both and served as a sabzi for rotis.It has a mixed flavours . To give it a nice color,added frozen peas.I like a bowl of sabzi for rotis.This sabzi bowl,vanished withing seconds.....ha ha .Healthy tooo...



Ingredients:
1.gobi                    -      1 cup
2.potato                 -       1
3.Peas                    -       1/4 cup
4.Onion                  -       1
5.Tomato                -       1
6.Ginger                  -       1 tsp (minced)
7.Garlic                  -        1 tsp (minced)
8.Chilli pwdr         -         1 tbsp
9.Turmeric pwdr    -          1/4 tsp
10.Garam masala   -          1/2 tsp
11.Cilantro

Method:
* wash and cut the cauli flower into separate florets.
* Boil potato ,peas and cube the potato.
* Chop onion,tomato finely.
* Take a microwave safe bowl and cook cauli flower florets with a dash of salt for 5 mins.
*  Take a wide pan ,add oil and splutter with mustard seeds,cumin seeds .
* Saute onion,ginger,garlic.Sprinkle salt to the  sautee.
* Dump in the tomatoes and saute till it gets mashed up.
* Add turmeric pwdr,chilli pwdr and give it a toss.
* When the raw smell, dissintergrates,add the cooked cauli flower to the mixture.
* Let it mix well with the masala.
* Finally dump in the boiled peas and potato to the mix and mix it well.
* Sprinkle garam masala.
* Adjust salt to the mixture  and garnish with cilantro.

Aloo Bonda ( Potato Stuffed Dumplings)

Aloo bonda is a very famous street  food  in south india.I remember the rainy days, where we used to buy it from local teas shop.The taste can never match five star hotels.Me and my siblings will have a tug of war to have a big portion.Hmm I am missing chennai a lot....To compensate that, I started preparing everything at home.Today we had a guest and when I served him with this aloo bonda , he was totally surrendered to the taste.I was delighted .Wat gift can a cook get other than appreciations abt her cooking.....He made my day..

Ingredients:

For Stuffing:
1.Potatoes             -       2
2.Onion                 -       1/2
3.Green chillies    -        3
4.ginger                 -        1/2 inch
5.Curry leaves       -       1 spring
6.Cilantro

For Batter:
1.Besan flour          -       1 cup
2.Cooking soda       -       a pinch
3.Kesari Color        -       a pinch
4.Salt                       -       to taste

Method:
* Boil the potatoes and chop onion,ginger,green chillies finely.
* Take a pan,add oil , splutter with mustard seeds and cumin seeds.
* Saute all the ingredients  under " Stuffing" ,except cilantro.
* Add cilantro at the last and mix it well.Keep the mixture in the fridge for half an hour.
* Divide the mixure into equal parts and roll them into small balls.
* Take a mixing bowl ,add all the ingredients under " for Batter" and form into a batter,by adding little water.
* The consistancy shud be like a bajji batter or it can be slightly thicker.
* Now dip the potato balls in the batter and deep fry them.
* Serve hot with ketch up.

Note:
We can aslo add rice flour to make the bondas crisper.

Potato - Brinjal stir fry

Potatoes can go with any veggie.I did a combo with brinjal.Its a simple stir fry and goes very well with sambar,rasam and curd rice.

Potato - Brinjal Stir Fry
Ingredients:
1.Potatoes                   -      2
2.Brinjal                     -      2
3.Onion                       -      1/2
4.Garlic                      -      4 pods
5.Red chillies             -      1/2 tbsp
6.Turmeric pwdr        -      1 tsp
8.Cilantro

For Tempering:
1.Oil                       -        1 bsp
2.Mustard seeds     -         1 tsp
3.Urad dal              -         1 tsp
4.curry leaves        -         1 spring

Method:
* Chop onion and crush garlic pods.
* Cut brinjals and potato length wise.
* Boil potatoes in a microwave safe bowl for 4 mins.
* In a pan, add oil splutter with mustard.
* Saute onion and crushed garlic till it looses its texture.
* Now strain potatoes and add it to the onion.
* Now add turmeric pwdr,chilli pwdr and mix well.
* When potatoes boil to 90% , add brinjals and saute well.
* Cover and cook for 8 mins or till it is cooked well.
* Garnish with cilantro and serve hot with rice or rasam.

Kids Friendly Potato pepper fry

Potatoes are always kids friendly.Potatoes in any form is acceptable in kids world.Rohith loves potatoes,when it is mildly spiced.I used to give these type of mild spiced potatoes atleast twice in a week.Its a combination of boiled potatoes,roated and served by sprinkling pepper.


Ingredients:
1.Potatoes            -       3
2.Chilli pwdr        -       1 tbsp
3.Turmeric pwdr -        1 tsp
4.Pepper pwdr    -         1 tsp
5.Hing                  -         a pinch
6.Curry leaves    -          1 spring

Method:
* Wash and cube the potatoes.
* In a mixing bowl, add all dry powders except pepper pwdr ,hing and drop the potatoes.
* Add salt and marinate for half an hour.
* In a pan, add a tbsp of oil and splutter with mustard seeds, urad dal and curry leaves.
* Add hing to the hot oil and now add the marinated potato.
* Keep in low flame anf roast it till it becomes crisp.
* Now sprinkle pepper pwdr and mix it real good.
* Serve with hot sambar or rasam.

Note:Dont cover while cooking potato, as it will disfigure the potatoes.

Potato masala for Chapathi / Poori Masala

Potato masala is the best combitation for chapathi or poori.Its a famous south indian gravy,which has mashed potato sauteed in onion,green chilli mixture.


 



Ingredients:
1.Potatoes                 -   2 (big)
2.Onion                     -   1
3.Green chillies        -    4
3(a).Garlic                -    2 to 3 pods
3(b).Ginger               -    1 inch
4.Mustard seeds        -    1 tsp
5.Cumin seeds           -    1 tsp
6.Red Chillies           -    3
7.Curry leaves           -     few
8.Cilntro                    -    few
9.Turmeric pwdr        -    a pinch
10.Salt                        -    to taste


Mashed potato,chopped onion,chillies,ginger,garlic,curry leaves...


Method:
* Pressure cook the potato for 3 whistles.
* Chop the onion,green chillies,ginger and garlic.
* In a pan add oil and splutter with mustard seeds,cumin seeds ,red chillies and curry leaves.
* Saute onions,green chillies till its transparent.
* Sprinkle salt to the onions,to make it cook fast.

* Mash the cooked potato (make sure that the potato is not too soft,let it be chunks).
 *Add potatoes to the pan and cook for 2 mins.
* Add 1/2 cup water to the mixture and bring it to a boil.Adjust salt to taste.
* Cover and cook in low flame for 2o minutes.When the oil oozes out ,turn it off.
* Garnish with cilantro and serve hot with chapathi.

Potato Roast (Urulai fry)

Potato roast is all time favourite.It goes very well with curd rice and all rice varieties.This recipe is my mother's and we all will fight to have a large portion of this dish.


 Drooling Aloo!!!
 Ingredients:
1.Potatoes               -   4
2.Garlic                  -   4 to 5 pods
3.Chilli pwdr          -  1 tbsp
3 (a) Turmeric pwr -  1 tsp
4.Hing                     -  a pinch
5.Mustard seeds      -  1 tsp
6.Curry leaves         -  1 spring
7.Cilantro
8.Urad dal               -  1 tsp

Method:
* Boil the potaoes with a pinch of turmeric pwdr and 1 tsp salt ,for 2 whistle or till it is half boiled.
* Crush the garlic with a crusher.
* In a pan, add oil and splutter with mustard seeds and urad dal.
* Add hing and garlic to the tempering.
* Add chilli pwdr and turmeric pwdr in oil and let the raw smell disappear.
* Dump in the potatoes into the pan.
* Put it in low flame and let it roast well.

Aloo Capsicum fry

Aloo in any form ,is everyone's favourite.When capsicum is added to it , then its a delight.Capsicum or green pepper gives , a heavenly aroma to any dish.If u add it to chicken, u can't just eat one and soon u will empty ur plate.So I will add capsicum to any possible dish .Give it a try u can never say no.


Aloo capsicun fry
 Aloo capsicum can be made dry or gravy.Since I did Mint rice for Lunch, cooked it as  dry.If u want to have it for chapathis. just add tomato to make it  a gravy.
Ingredients:
1.Onion                    -   1/2
2.Green pepper        -    1
3.Potato                    -    3 ( Medium)
4.Chilli pwdr            -    1 tbsp
5.Turmeric pwdr       -   1 tsp
6.Curry leaves
7.Cilantro

Method:
* Chop the onion and dice the capsicum as shown.



Diced capsicum
 * Cut the potato into cubes and half cook in microwave ,so it cooks faster in the gravy.

* Take a pan, pour oil and splutter with mustard seeds and saute the onion till it turns golden brown.
* Add the diced capsicum and potatoes.
* When they are half cooked, add turmeric pwdr and chilli pwdr.
* Let the raw smell goes off.
* Close the pan with a lid and let it cook.


* Sprinkle salt to taste and garnish with cilantro.

Aloo Paratha

Aloo parathas are my fav.Its so simple that we can do it in large quantities and freeze it for later use.Its a perfect dish for outdoor parties and goes handy for vactions....




Ingredients:

1.Wheat flour - 3 cups
2.potato - 3 medium sized
3.green chillies - 3 to 4
4.garlic - 4 pods
5.ginger
6.chilli pwdr - 1 tbsp
7.cilantro - for garnishing
Methods:
Basically there are 2 ways to prepare aloo parathas.One is just adding all the ingredients together and stuff it inside the paratha .The other way is to saute all the ingredients in a pan and stuff it in the paratha.
Process 1 : Raw method
* Prepare the chapathi dough and keep it aside.
* Boil the potatoes and grate them .
* crush the garlic pods and chop the chillies finely.
* mix all together with cilantro and stuff it in the chapathis
*make sure that each paratha is thick , so it wont leak the stuffing outside.
Process 2 :
* In a heated pan of oil, add grated potatoes,chillies,ginger garlic paste,chilli pwdr and saute it well.At the end add cilantro and make the mixture into small balls.
* roll the dough and place the potato ball and cover it.
* now roll the parathas carefully , that it shud not be torn
* at last cook it in a tava.
Aloo parathas goes well with pickles.Add the platter with a glass of lassi, believe me , ur party is on...............
